- 3 cups fresh Mango Puree

- 1/4 cups warm Milk
- 5-6 strands Saffron / Kesar
- 1/2-3/4 tsp Cardamom Powder
Instructions to make Aamrakhand / Mango Shrikhand
- Hang up the curd after tying it up tightly in a muslin cloth for 5-6 hours. Keep an empty vessel below to collect the curd residue which drains out. You can use this water to make kadhi, knead the dough for paranthas or bhature etc.
- Mix the saffron strands in warm milk and set aside.
- Remove the dense curd or Chakka as it is called in Marathi into a large mixing bowl.
- Add the powdered sugar and the mango puree gradually and whip the curd with an electric / hand mixer for a good 15-20 minutes until smooth and creamy.
- Add the saffron milk and the cardamom powder and fold in gently.

- Keep the Aamrakhand in a serving bowl and refrigerate for atleast 2 hours.
- Serve chilled!
